My son has a career in nursing education these days, but spent his early years as a member of various swim teams. Participation was such a positive experience for our entire family (even grandparents), that I sing the praises of swimming to anyone who'll listen. Many years ago, a promotional flyer for a local swim club (USASwimming) found it's way into my son's backpack. We investigated, then jumped in with both feet... SPLASH!
(My son worked as an instructor lifeguard for our municipal pool during his high school and college years.)

Energy Bar Recipe
I like Larabars. They are tasty, healthy, and, unfortunately, rather pricey. Homemade Larabars are easy and quick to make.
1 Cup Raw Almonds 1 Cup Medjool Dates (seeded) 1 Cup Pitted Prunes (moist are best) 1 Tablespoon Natural Peanut Butter 1/3 Cup Dark Chocolate (70%) (chopped) 1/3 Cup Unsweetened Shredded Coconut (optional)
1. Pulse almonds in a food processor until finely chopped. Add chocolate and pulse fine. Remove the almond/chocolate mixture to another bowl.
2. Add the roughly chopped dates and prunes to the food processor and pulse until they become a paste which clumps together. Add the peanut butter and pulse until mixed.
3. Add the almond mixture and process ingredients until well blended.
4. Press into an 8"x8" pan. Cover and chill for a couple of hours. Cut into 16 two-inch bars.
